Noobie Summoner here.

I just started playing about 10-12 days ago, leveling has been easy. I made it to level 50 last night. Can any of you summoners direct me in the way of soul shields, weapon set ups, accessories, etc... google has not been my friend. :)

For PvE, full yeti soul shield with good rolls (keep in mind accuracy will be very important in the coming patches). As for weapons and accessories just follow the evolve path, I would take the siren path not the oathbreaker one for weapons. There is some leeway though, for example the breeze bracelet/scorpio or breeze belt/breeze necklaces are viable alternatives if you get ones with good rolls (placeholders until you can afford to get to say oathbreaker). You're better off sticking to evolve ring and earring though.
