Blue quests

Is it worth doing all the blue quests? I'm in the Scorching Sands and I did every single blue quest.

You can do the blue quests if you want to or like the specific side story. But progress wise, no, no need at all. When you reached this point already, you should be finde just doing the yellow quest and not have any problem of beeing to low for the main story. Also blue quests mostly don't give much reward, so I personally just skipped them.

You should however do the violett quests at some point (all something with windwalk).

Later you get orange quests (well 2 quest lines) for weekly dungeons, which you should complete as far as you can (last stage requires killing stuff in the raids, but you don't need that to unlock the weekly quests)
