How do you upgrade existing gems?

I've read that one can upgrade a gem by taking the gem itself and two of its associated essences... but the transmutation window only gives options to try for gem boxes, as far as I can tell. Where is the dialog to upgrade a  gem sitting in my inventory? Or am I missing something here?
