Anyone know how to create new characters on a new server?

I am going to start off fresh again after the insane queue time on Windrest shows up. 

 

anyone know to do this? Everytime when i login i automatically jumped into Windrest characters and there are no options to change servers.

 

do i have to delete all my characters first or is there a button to go on another server?
